Hello Monday! This weekend can’t be summed up with one word or feeling. It was more like a roller coaster. It was both utterly fantastic and kinda crappy. More on that in the next post…today….tomorrow…soon, promise. But for now I wanted to share with you one of the good moments…we had deep fried chocolate chip cookie dough!! YUM! We took the frozen premeasured ready to bake chocolate chip cookie dough and dipped it in thick pancake batter, and then yes we fried it! (Well my husband gets all the credit for this one…I just ate it) I definitely recommend trying it it’s heavenly!!
I thought I’d add one of my favorite recipes for you too. My sister and I call it Poor Man’s Cheesecake. I promise you’ll love it . Here goes:
Poor Man’s Cheesecake
2 pk Crescent Rolls
2 -8oz pk Cream Cheese
3/4C Sugar
1 Egg Yolk
1tsp Vanilla
Frosting:
1C Confect. Sugar
1TBSP Milk
1tsp Almond Extract
Roll 1pk crescent rolls out in a 9x13 pan. Mix cream cheese, sugar, egg yolk, and vanilla. Spread in pan. Roll remaining pk of crescent rolls on top. Bake at 350⁰ for 30 minutes until golden brown on top. Cool. Mix confect. Sugar, milk, and almond extract (I sometimes vary the amount depending on the consistency, should be a little runny…and I like to make a little extra so it covers the whole thing). Drizzle over top.

Wow, yum. The cheesecake is almost the same as my recipe but the crescent roll part sounds delicious. I'll have to try it!
